Healthy Food Post: Vegan Tacos

Hello Loves!
This week I’m doing a healthy vegan food post! I haven’t made many food posts because to be honest I don’t eat healthy all the time 😛 but I do have lots of recipes so I’ll start sharing those more often. Now this recipe is vegan because i’m a vegetarian (I prefer vegan stuff though as the way everything is made is very disturbing and dairy makes me feel sick sometimes I’m half-tose-intolerant XD) Anyway this is my favorite recipe I make and it’s vegan tacos let’s get into this!

Vegan Black Bean, Corn, Quinoa Tacos

1 1/2 cups cooked quinoa
1 Tbsp olive oil
1 half red onion (chopped very small)
3 cloves garlic, minced
1 cup vegetable broth (watch the sodium get organic low sodium if possible)
1 tomato
1 1/2 tsp chili powder
1 tsp taco powder/seasoning
1tsp chilli powder/seaoning
1/4 – 1/2 tsp cayenne pepper
Salt and pepper to taste
2-3 cups frozen corn (i like lots of corn)
2 cans black beans drained and rinsed

Extras/serve with:
Tortillas hard or soft your choice
Lettuce
cheese (vegan or regular)
avocados
tomatoes
Salsa (I like mine with peppers!)
Anything you like with tacos!

How to cook/Directions

Heat olive oil in a large non-stick saucepan over medium high heat. Once hot, add onion and saute until golden and tender, about 3 minutes. Add in garlic and saute 30 seconds longer. Stir in broth, diced tomatoes, cooked quinoa, sprices/chilli/taco/caynne/etc and season with salt and pepper to taste. Bring mixture to a boil, then reduce heat, cover saucepan with lid and simmer about 20 minutes, until mixture has thickened.
Stir in corn and black beans and simmer, uncovered 5 – 10 minutes, stirring occasionally. Enjoy!

These tacos are better than the tacos I use to eat as a meat eater! They have a good texture and taste, they’re hot, spiceyish, soft, they’re heaven that’s how I describe them I love them so much even my meat obsessed brother likes these try them out i’m sure you’ll love them. Love you!
