Vegan Curry Lentil Rice
1/2 medium red onion chopped
1 clove garlic minced
1 medium sized carrot chopped
1 1/2 cup vegetable broth
1/4 cup coconut milk
1/2 cup dried lentils
2 tsp curry powder (or to taste sometimes I do 2 tbs instead of tsp)
2 tsp brown sugar
1. In a medium sized saucepan, place the vegetable broth along with the onion and lentils. Bring to a boil until the onion has softened a bit, which should take about 5 minutes.
2. Add the garlic, carrot, and curry powder and coconut milk to the pan. Stir and bring to a simmer. Cook for about 20 minutes
3. When the lentils and veggies have completely softened, turn off the stove and add the sugar. Serve over rice.
This meal doesn’t look very good but it really tastes wonderful! You can really smell and taste the curry. You don’t even need to eat this with rice you can eat it as a side for some of your meals too. Check back every Tuesday and Thursday for fashion, beauty, food posts. Love you!
